I'd like to take Care of Magical Creatures... it seems like Hagrid introduces his students to some pretty interesting (if a bit on the dangerous side) stuff. Also, Flying Class with Madam Hooch. I like Quidditch more than I do most real sports.

Personally, I think Charms would be the most usefull, learning to make objects fly around...

I like COMC or transfiguration! they both sound rocking, so does the whole thing to be honest!

I also think that transfiguration would be fun. It would be rather difficult, but interesting once I could actually do things.
