As much as I love Hagrid, I think that Lupin was the best teacher, plus he was nice and fun. McGonagall is also a good teacher, but is a little too strict, remember, some of these kids are only 11, they shouldn't feel threatened like that.
I rather like Flitwick too. I have this wonderfull picture of him in my head, I think it's from GoF, and they are learning banishing charms. Something like he was serenely flying across the room or something, so funny. And the way he fell off his books in PS when he saw that Harry was in his class.
